The Cambridgeshire 18-year-old cruised past the world No.163 from Italy 6-1, 6-2 in an hour-and-a-half.
It is Stoop’s biggest professional win to date over a player ranked more than 300 places above her.
She’s the highest ranked player I've played, so I'm really pleased to have got through.
Georgie Stoop
The teenager recently broke into the WTA top 500 at No.477 after reaching the final of a $10,000 event in Nottingham in September.
Afterwards, Stoop said her consistency and composure helped her pull off the victory.
“She’s the highest ranked player I've played, so I'm really pleased to have got through,” Stoop said.
“I'm looking forward to my second round where I believe if I work hard and play like I did today I can get another win.”
Stoop is one of five Britons into round two so far after victories for top seed Anne Keothavong, third seed Mel South, British No.3 Katie O’Brien and Kent teenager Naomi Cavaday who beat the seventh seed in three sets.
Cavaday recovered from dropping the first set to get past world No.207 Ana Vrljic of Croatia 4-6, 6-1, 6-2.
The left-hander from Chislehurst saw her world ranking climb 90 places to No.403 this week after reaching the last four of the recent Nottingham $25,000 event.
Keothavong was made to work hard by her Polish opponent, Karolina Kosinska, before coming through in two-and-a-half hours 4-6, 6-3, 6-2.
“I’m looking to get some matches under my belt as it’s been quite tough lately,” admitted Keothavong, who lost three successive first round matches at WTA Tour events in Asia before arriving in the Channel Islands.
“I haven’t lost a match in two previous visits to Jersey so I guess this is the place to do it.”
Keothavong will take on O'Brien for a place in the last eight after the Yorkshire 20-year-old continued her recent good form by easing past another Croatian, Matea Mezak, 6-4 6-1.
British No.2 South enjoyed a 6-2, 7-6(3) victory over Russian Natalie Orlova, but said afterwards that she will be aiming to improve in her second round match.
“It was a bit rocky but I got through it,” the Surrey 20-year-old said.
“I know I've got to be better tomorrow, so I’ll go out later today and hit some more balls to make sure I am.
“Jersey is a tournament I’ve done well at before and I'm looking to carry that on this week.”
Earlier, Rebecca Llewellyn lost to the No.8 seed Zsofia Gubacsi of Hungary 6-1, 6-2, while qualifier Jane O'Donoghue was edged out by Frenchwoman Laura Thorpe 7-6 in the final set.
